- I have been obsessively working on what “Appalachian” BBQ tastes like. This pork butt is seasoned with Sassafras, Spice Bush and Preserved Wild Ramps, all flavors of the forest I grew up playing in. Pretty darn happy with this and want to offer Pulled Pork BBQ sandwich kits for ya’ll for Labor Day. Each kit makes 4 sandwiches and comes with slaw and potato salad. - My number 1 favorite thing to eat in the whole entire universe is a Cheeseburger. I have created a bunch of burgers for different restaurants throughout my career. So when it came time to finally dream one for audreynashville I knew it had to tell our story and mission. bearcreekfarm beef is blended with Hickory smoked bacon, then carefully grilled over Hickory wood embers. We place a dome on top while the burger is grilling to create the flavor of an old fashioned BBQ pit. The sweet southern onions are shaved thick and soaked in beef garum made in thelabataudrey. They get placed under slices of Colby Jack cheese (origin of American cheese) while we finish grilling and smoking the burger. The bun is a simple brioche recipe using buttermilk. It gets toasted with a ton of butter and then placed on the burger while the cheese is melting on the grill. The sauce is pretty special, we make a mayo using freshly pressed hickory nut oil, tomato concentrate, beef garum and a syrup made from Shagbark hickory bark (all from thelabataudrey). Finished with sweet and spicy pickles and a slice of tomato brushed with the tomato concentrate. Y’all come give it a try, we’ll keep trying to make it better and better each time.
