I have been obsessively working on what “Appalachian” BBQ tastes like. This pork butt is seasoned with Sassafras, Spice Bush and Preserved Wild Ramps, all flavors of the forest I grew up playing in. Pretty darn happy with this and want to offer Pulled Pork BBQ sandwich kits for ya’ll for Labor Day. Each kit makes 4 sandwiches and comes with slaw and potato salad. Duroc Pork Ribs, grilled over hot coals for most of the day. The coals are produced by burning down hickory and sassafras wood. The smell in the restaurant today was pure magic! The ribs get sprayed with ramp vinegar and ramp root LSK every 45 minutes or so. On pickup, they are portioned and painted with a BBQ sauce made from pork stock and heavily charred ramps that have been preserved in the fridge for a few years. I love how every culture seems to have a soulful dish centered around Wheat and Chicken. Two very humble things that can be prepared a gazzilion different ways and no matter how they are prepared, they still create the same emotion, comfort. These are the dumplings made from soft winter wheat and full fat, real deal buttermilk that I grew up with in Appalachia, poached in a rich chicken broth.

Okra simmered in freshly pressed oliverfarm okra seed oil, some butter and toasted ansonmills buckwheat groats for audreynashville. Amazing concentration of flavor, the okra softens but retains the natural raw flavor straight from the plant.  The buckwheat groats actually taste very similar to okra. audreynashville TOMATO dish for 2024. Tomatoes are seasoned with thelabataudrey tomato concentrate and then doused in a sauce made from sunflower petals, sunflower hearts and sunflower seeds. We garnish with Watermelon cubes dressed with a fresh wasabi dressing.  Croutons are made from an amazing Appalachian sourdough by basementbreadproject. A wonderful technique by imlostinthesupermarket that magically transforms henosismushrooms Lion’s Mane mushrooms into something very similar to Pit Cooked Pork Shoulder. An overnight marinade with some thelabataudrey miso and Dijon mustard followed by a flash fry to set the crust and add fat to the inside of the mushroom. The mushrooms then spend several hours in our grillsbydemant BBQ pit filled with glowing Hickory Embers. As the mushrooms are barbecuing we mop them with a Pickled Peach BBQ sauce, we then season with bourbonbarrelfoods togarashi and cover it with finely cut shiso leaves. Vinyl Community Night has been so much fun having it at bar.audrey on Monday nights. Its been so great to see everyone again and share the music that we love with each other. The new burger has been a big hit, thanks so much to everyone for coming to check it out. One of my favorite Appalachian ingredients. We use this in so many different different ways. When they’re pressed for oil, which we use a lot of, you end up with an amazing hickory nut flour. The shells also have value, you can use them for smoking.  We use the bark to make a syrup that is mind blowing.  What are some other ways that y’all have seen people use hickory nuts and hickory trees? My number 1 favorite thing to eat in the whole entire universe is a Cheeseburger. I have created a bunch of burgers for different restaurants throughout my career. So when it came time to finally dream one for audreynashville I knew it had to tell our story and mission. 

bearcreekfarm beef is blended with Hickory smoked bacon, then carefully grilled over Hickory wood embers. We place a dome on top while the burger is grilling to create the flavor of an old fashioned BBQ pit. The sweet southern onions are shaved thick and soaked in beef garum made in thelabataudrey. They get placed under slices of Colby Jack cheese (origin of American cheese) while we finish grilling and smoking the burger. The bun is a simple brioche recipe using buttermilk. It gets toasted with a ton of butter and then placed on the burger while the cheese is melting on the grill. The sauce is pretty special, we make a mayo using freshly pressed hickory nut oil, tomato concentrate, beef garum and a syrup made from Shagbark hickory bark (all from thelabataudrey). Finished with sweet and spicy pickles and a slice of tomato brushed with the tomato concentrate. Y’all come give it a try, we’ll keep trying to make it better and better each time. The first Vinyl Community Night at thebarataudrey was so wonderful. It was incredible having all the amazing regulars in one room again, sharing our passion for sound. And as always thank you to tylerglaser for his amazing ability to weave all the different genres into a cohesive set. I have met so many new people that I adore through the vinyl community and can’t wait to meet more of you!  Let’s do VCN every Monday!
