A HUGE congratulations to jasonhammel (and Lea Tshilds) not only for 25 years of great food lulacafe, but for being an incredible leader in our vibrant, supportive chef community.  Brilliant vision to invite 25 of Chicago’s best chefs to cook dinner at Lula—5 a night for 5 consecutive nights—and have the proceeds support a different chef-founded charity each night.  The fact that chefs responded within minutes to Jason’s ask is one of the reasons I am so proud to be part of this generous community.  The fact that there are more than 5 chef-founded not-fot-profits in Chicago makes me even prouder.  On Saturday night, we raised money for Jason/Matthias Merges/Paul Kahan’s pilotlightchefs.  I was proud to cook alongside 4 truly inspiring chefs:  matthias1966, zjengle, chefazimmerman & geniekwon (& bigchef). Just off the plane—no better welcome than rustic, glorious smoke alley.  Dinner (and great cocktails!) tierradelsol is perfectly ancient & modern.  Best part: fresh-made tortillas & salsas before going to the table. Abundant almuerzo cooked on wood fire at roadside Comedor Los Huamuches near Santa Catarina Minas.  Spectacular to be with mujermezcal realminerooficial introducing staff to the rich complexity of agaves & mezcal making. And later to introducing them to the singular vision of chef Jorge León alfonsinaoax. Making 4 classic moles on metates at Reyna Mendoza’s Sabor Zapoteco in Teotitlán del Valle was totally my jam. Shoutout to Pastry Chef Jennifer Enyart for making this dessert-lover very, very happy with her new menu at Frontera Grill. This may be the best strawberry ice cream I've ever had, and that's not even mentioning her perfect Mexican Chocolate Tres Leches Cake! We spent four days cooking, eating, drinking, and getting inspired together -- I couldn't be more grateful for this time and all the people that took care of us, as we explored all the beautiful (and very delicious) things that Oaxaca had to offer. Everyone will say that what sets this iconic Puebla “torta” apart is the bread, the rambunctiously herby pápalo, great cheese and pickled chipotles. The round of bread is perfectly crunchy and crusted with sesame, the herb has a singular flavor (though some say it tastes like a muscley cilantro), the cheese is fresh and rich, and the sweet-sour smoke and spice of the chipotles are unique to Puebla. Add to those a crispy slab of beef, pork or chicken milanesa and more-than-average amount of avocado–well, you see why it’s a stand-out.
