  • When all else fails, Adai comes to the rescue in my kitchen. Very often, we buy some ingredients and then struggle to finish it off due to unforeseen circumstances. Two months ago, I had bought millet from the Indian grocer. Then, I forgot to use it. Last week, when I set about cleaning my pantry, I discovered that canister of millet. When I opened it, it almost felt as though it was challenging me. I could almost hear it or maybe I imagined it (thanks to all that Ibrupofen, eh). Feeling suddenly renewed with energy, I decided to put that millet to good use. Here is what got made - Some crispy around the edges, soft in the center kind of millet Adai using ✔️1 cup each Idli rice & little Millet ✔️1/3 cup each Toor dal, Chana Dal and broken white Urad Dal ✔️20 dry red chili (I used the low heat variety) ✔️2 cloves garlic peeled ✔️1.5 inch ginger peeled ✔️1.25 tsp fennel seeds ✔️1 tsp Turmeric powder ✔️A handful of curry leaves ✔️Salt to taste ✔️1.5 to 2 cups water for grinding (approximately) ✔️A generous pinch of asafetida ✔️Coconut oil for making Adai Directions- Wash the rice, millet and dal well until water runs clear. Drain all water used for washing. Add 6-7 cups water to this washed mixture. Also add red chilis to this and let it soak for 6 hours. After 6 hours, drain the mixture fully. To a blender, add 1/2 the soaked mixture along with ginger, garlic, chilis, turmeric, salt, fennel seeds, curry leaves, asafetida and 3/4cup water. Grind to a slightly coarse paste. Transfer to a container. Grind the remaining mixture along with 1 cup water to a paste. Combine this with the previous batch of ground batter. Mix well. Heat a cast iron pan and coat it lightly with coconut oil. Spread a ladle of batter into a slightly thick circle on the Tawa. Cook on medium heat, drizzling the coconut oil around the edges. We need 1 tsp oil for every Adai here. Wait for the Adai to turn golden around the edges and you see no raw batter on the surface. Flip and continue to cook until the other side is cooked fully.
